A self-described “foodie,” who uses her journalistic background to spread the word about foodie ideas, Ellen leads the team at Wild Virginia since first making the Fig Balsamic in 1992. “It’s my foray into the local food culture and I love being at farmer’s markets, meeting like-minded people and connecting with other vendors and farmers.

It was James’ idea to put the first flavor in a bottle, after giving it out to everyone we knew! He’s an architect by day, and great to have at the Farmer’s Markets on the weekends. The Honey Mustard flavor was James’ brilliant idea.

How It All Began

Our family loved to eat salad – yeah, even the kids. But how many days can you serve it with goopy store-bought dressings? And how many nights can you whip it up yourself? The thing is, I couldn’t find a “homemade” type dressing in the stores that had 100% EVOO (extra virgin olive oil) right there listed first, without other added oils or water. I know this because I’ve read a zillion labels and tried most of the dressings in the supermarkets and gourmet shops. And, being on the health bandwagon with all my buddies, I knew one thing: salad dressing was best when it contained EVOO. 

So I got to work making my own, natural salad dressing. After starting with EVOO, my next ingredient choice was balsamic vinegar – it’s full tasting, has some edge to it, but is still a bit sweet. I put in a teeny tiny hint of raspberry and some spices, keeping it simple and pure. No added stabilizers, thickeners or potential allergens.

Years went by and the dressing became a family staple. Sure, the kids wanted variety here and there, but this was our go-to favorite. I was making it for all my friends and relatives. Even the school bus drivers liked it! Other kids we knew started eating salad “because of that stuff” (as they’d point to the bottle with the easy flip-top cap). And because you don’t need a lot per serving, it worked for my waistline. When my yoga studio ordered it by the case, I was pumped!

So we got wild (just a little bit) and bottled the creation. And … voila! Wild Virginia was born
